Description

Vegan Pasta Carbonara with Tofu is a plant-based twist on the classic Italian carbonara. This innovative recipe uses plant-based ingredients to mimic perfectly the rich and creamy flavor. Tofu is also transformed into crispy tofu bacon, providing a satisfying crunch and deep flavor. All that combined together with the creamy sauce gives umami flavor.

  1. Tofu "Pancetta" Prep

    Press the tofu - Drain it and wrap in a clean tea towel. Place a plate or a pan on top of the wrapped tofu and put a cast iron pan on top of that (or something with equivalent weight). Let the tofu press for ~30 minutes.

    Preheat the oven to 375 F and use baking sheet.

    Cut the tofu into small cubes. In a large bowl whisk together the soy sauce, tomato paste, olive oil, liquid smoke and garlic powder. Add the tofu pieces and stir until all are coated.

    Dump the tofu-sauce mix onto the prepared pan and spread evenly. Bake in the oven for 30-35 minutes, flipping the tofu over once halfway through cooking. Be careful not to burn the tofu. Once baked remove and set aside.

  2. Sauce

    Bring around ~4 cups of water to boil. Pour the hot water over the cashews and let soak for 5 minutes.

    Drain the cashews and discard the left out water. Add them to a blender along with the garlic, nutritional yeast, two cups of fresh water, lemon juice and salt. Blend until very smooth. Set aside.

  3. Final touches

    Boil the noodles according to the package instructions, then drain and return back to the pot. Add in the cream sauce and stir over low to medium heat until thick.

    Serve immediately with the tofu, fresh basil and vegan parmesan or as desired.
