A quick and delicious Italian dish that combines tender Tortellini with a vibrant, homemade basil pesto.

Pesto
Heat 1/4 cup plus 2 tbsp pine nuts in a small sautรฉ pan over medium heat until lightly brown.
Save 2 tbsp roasted pine nuts for serving.
Put the olive oil and basil leaves into a blender. Blend for ~60 seconds or until the ingredients are combined fully (But not totally smooth).
Add 1/4 cup pine nuts, garlic, 1/2 cup parmesan, salt and pepper and blend ~30-60 seconds.
Taste and adjust seasoning based on preference and set the sauce aside.

Tortellini
Cook the tortellini according to packaging instructions in a salter water.
Once cooked, drain but do not rinse!

Add the pesto sauce and tortellini in a pot and stir until evenly coated.
Sprinkle with remaining roasted pine nuts and parmesan.
Add tomatoes if desired.
Serve immediately garnished with extra parmesan cheese, toasted pine nuts and basil.
