Preparing the wedges
Preheat the oven to 450ห F (230ห C). Line a baking sheet or parchment paper. Cut the potatoes in wedges by cutting lengthwise in half and then each half into 4-5 wedges. Place the potatoes in a bowl of cold water with 2 cups of ice and let them cool for 30 min. After they have stayed in the cold water for 30 min, dry them thoroughly and pat dry with a towel or paper towels and place into a large mixing bowl.

Season the potatoes with salt, paprika, pepper and garlic powder and toss to combine. Drizzle the potatoes with 1/4 cup of olive oil and toss to coat them.
