Instructions

  1. Step 1

    Pre-heat the oven to 200C (180C if fan)

  2. Step 2

    Put 1 kg of the potatoes (peeled and halved) in a saucepan and pour over just enough water to cover them fully. Bring to boil and then simmer until tender.

    When cooked, drain thoroughly and mash with a splash of milk and a knob of butter. Season with black pepper (to taste)

  3. Step 3

    Put 25g butter, 25g plain flour and 4 (finely sliced) spring onions in a pan. Heat gently until the butter is melted. Stir regularly - cook for 1~2 minutes.

  4. Step 4

    Using a balloon whisk, gradually whisk in ~400ml milk. Bring to boil and stir to avoid any lumps and sticking to the bottom of the pan. Cook for 3~4 mins until thick.

  5. Step 5

    Take off the heat and stir in 350~400g mixed fish, 1 tsp Dijon mustard, small bunch of finely chopped chives and a handful of petits pois. Spoon into an ovenproof dish.

  6. Step 6

    Spoon the potato on top and sprinkle with a handful of grated cheddar cheese.

    Bake in the oven for 20-25 min or until golden and bubbling at the edges.ย
