Description

Bean Curd Vegetable Soup is a nourishing and flavorful dish that combines fresh vegetables and tender tofu in a light and savory broth.

Ingredients
  • 1 tsp Peanut Oil (Vegetable oil works too)
  • 4 Green Onions (Cut into 5 cm piece)
  • 1 Ginger (Sliced)
  • 4 cups Water
  • 1 tbsp Mushroom powder
  • 3/4 tsp Salt
  • 1/2 tsp Sugar
  • 1/8 tsp White Pepper
  • 1/2 block Soft Tofu (Diced)
  • 2 stalks Celery (Sliced)
  • 4 oz mushrooms (~125 gr, sliced)
  • 1 Carrot (Sliced)
  • 1/2 Head Broccoli (Cut into florets)
Instructions
  1. Step 1

    Heat the oil in a medium-sized pot over medium heat and then add the green onions and ginger. Cook and stir until beginning to brown ~2 minutes.
    Pour in the water and bring to a low boil. Boil for ~5 minutes and then remove and discard the green onion and ginger. 

  2. Step 2

    Add the mushroom powder, white pepper, salt and sugar. Stir and mix well. Add the tofu, mushrooms and celery. Bring to boil and cook for 3 minutes. Add the carrots and broccoli and boil for another ~2 minutes. Taste the broth and season if needed by adding more salt or mushroom powder.

    Serve and enjoy!
