A delightful fusion of rich and creamy Alfredo sauce and tender, flaky salmon. This dish combines the flavors of classic Italian Alfredo pasta with the nutritious and healthy salmon.ย

Instructions

  1. Boil water

    Boil a large pot of salted water and add the fettuccine and cook until al dente (just cooked through).

  2. Sauce prep

    Melt butter in a deep fry pan on medium heat. Add the shallots and sautรฉ for 2 minutes or until tender. Add the cream and bring to boil. Once boiling turn the heat down to medium-low and simmer for around 3 minutes.

    Remove the fry pan from the heat and add the Parmigiano Reggiano, little salt and little pepper and stir until the sauce is smooth.

  3. Pasta water

    Take out 1/2 cup of pasta water (scoop out additional mug just in case) then drain the pasta.

    Transfer the pasta and 1/2 cup of the preserved pasta water into the frying pan with the sauce.

    Add the salmon and return the fry pan to the stove over medium heat.

  4. Final touch

    Toss very gently to coat all the pasta in sauce. (There should not be any sauce at the bottom of the pan, the pasta should absorb it all)

    Remove from the stove and serve immediately.
    -Optional: Garnish with additional Parmigiano Reggiano and fresh parsley.
